Limetree's Simple Salsa

Makes 1 quart of salsa. The key is to make and eat fresh!
5 ripe tomatoes
I medium size red onion
1 lime, juiced
Handful fresh cilantro
Chili peppers (your choice. Jalapenos are traditional, 1 should do it)
Salt to taste
Chop or puree tomatoes.
Finely chop onion, chili peppers and cilantro.
If you don't have chili peppers, a half teaspoon of cayenne pepper will do.
Add lime juice and mix everything together.
Add salt to taste and secret ingredient – a teaspoon of maple syrup to bring out the flavors. Let sit for at least an hour.
Overnight refrigerated is even better.
Optional: add a cup of dices or pureed mango or pineapple for a tropical flare.
